Chablé Resort & Spa, Yucatan, Mexico

Chablé Resort & Spa offers 38 casitas and two expansive villas. Each casita is purposely situated within the lush gardens where nature can be enjoyed to its fullest. The original 19th century walls of the working hacienda serve as the framework for every casita, and incorporates modern touches, warm woods and traditional Mayan architecture to make Chablé a true work of art. Every room has a view and every view is a living part of the Hacienda. The Spa is a world class facility with a uniquely holistic approach. It is built around a natural “cenote”, which serves as extension of the Spa. Chablé’s culinary offer was designed by acclaimed Chef Jorge Vallejo. His restaurant Quintonil, in Mexico City, was recently awarded as the 22nd best by “The World’s 50 Best Restaurants 2017”. Under his leadership, Luis Ronzón, Chablé executive chef, enhances the gastronomic experience at the resort three restaurants, which are based on organic and seasonal cuisine mostly sourced from the on-site traditional Maya gardens. A true paradise to be discovered.

Yucatán, the Mexican state, is known for its Gulf of Mexico beaches and Mayan ruins. Famed Chichén Itzá encompasses a massive pyramid, ball court and stone temples. Other Mayan sites include Ek Balam, noted for well preserved sculptures, and Uxmal, with its intricate carved facades. Yucatán’s capital and largest city, Mérida, has a Spanish colonial history reflected in buildings such as 16th-century Mérida Cathedral.
